The beauty of life is sometimes found in the most unexpected places, like amidst the tough bark, where this delicate seed decided to germinate.

 

 

What To Do with Gigantic Zucchini

 

 

So what do you do with a zucchini so huge, it measures the length of your arm?

You make zucchini hash, of course!

 

EASY RECIPE, like 1, 2, 3

2 Tbsp Extra Virgin Olive Oil

2 cups chopped zucchini

1 clove fresh garlic, crushed

1/2 white or yellow onion, chopped

1/2 can corn

1/2 can black beans

Fresh chopped herbs (oregano, thyme)

Pinch of cayenne pepper

Salt to taste





 

 

So simple.

  Heat olive oil, adding first the zucchini and onions.  Stir on medium heat until slightly tender.  Add corn, black beans, and garlic. Add chopped herbs at the very end, along with seasoning. Stir for another minute or so. And, voila!  Simple, tasty, and easy to store, or take to work...

 

 

 

 

Sugarbaby Growth Spurt

This first 3 pounder appeared to have come to full maturity  after pruning some of the vines back.  Except for a little crack on its side, there was nothing funky or damaged on the inside.  Just an offering of pure, sweet, homegrown goodness :)  

With a little feta cheese, made the morning nice and bright.
